Prosper Maufoux Chablis is made from low trained vines located on the commune of Beine in Yonne area. The clay-limestone soils allow for a full expression of the Chardonnay varietal. The grapes are pressed and the juice is clarified at low temperature to preserve its freshness. Alcoholic and malolactic fermentations take place in a temperature-controlled stainless steel vat. This is followed by ageing on fine lees in a stainless steel vat for 10 months. This Chablis is pale yellow with green tints. A stony nose (typical of the Chablis vineyard) with oyster shell notes. It is elegant with aromas of fresh white fruits. Serve between 10 and 11°C.
